Grown up Peanut Butter
This recipe is a sweet reminder of a cheeky break in Lyme Regis, Dorset. We love the vibe of this little seaside town and its opulent food offer varying from award wining fish restaurants to coffee shops and bakeries. One of them, certainly worth visiting is Town Mill Bakery serving for breakfast their artisan breads with home made peanut butter.
Whilst their recipe is a well-guarded secret it encouraged us to pursue our own way of preparing this tasty preserve. The result has exceeded our widest expectations. The golden paste has soon become our favourite treat of our friends and family.
We love ours with a toasted crumpet and a hearty dollop of homemade strawberry jam. Yummy!
Ingredients:
- 340g blanched peanuts
- 0.5 tsp salt
- 1tbsp honey
- 4tbsp groundnut oil
Method:
Roast peanuts for 30min at 180° C in a pre-heated oven or until brown in colour. Then allow to cool down.
Place peanuts, honey and salt in a bowl of a food processor and blend for 1min.
Scrape down the sides and return to blending mode slowly adding oil. Continue until the mixture reaches the required level of coarseness.
Tip:
Be aware nuts continue to cook whilst outside the oven. Make sure they are removed from the oven when one shade paler that required colour.
